About this Course

You will be able to develop the skills learnt at Level 1 to learn more about food preparation and more complex cooking techniques, alongside developing your food and beverage service skills.

  • Meat dishes
  • Soups
  • Vegetables
  • Pasta Dishes
  • Pastries
  • Desserts
During your theoretical lessons you will study:
  • Food Safety and Hygiene
  • Cooking Techniques
  • Costings and Menu Planning
  • Preparing Healthier Foods
  • Catering for Special Dietary Requirements
You will also be expected to study GCSE English Language and Maths if these have not already been achieved.

Entry Requirements

Level 1 Catering and Hospitality and Functional Skills at a minimum of Entry 3.

Assessment

  • Practical assessments
  • Short answer test papers
  • Written assignments

Your practical work will be assessed in the kitchens and the award winning, licensed, public restaurant, The Silver Plate. 

Approximately 40% of the course is theory assessed by a series of short answer test papers and written assignments on topics such as food safety and health and safety awareness. The assignments are spread out evenly over the academic year.

Will this course suit me?
An ideal student for this course is one who is motivated with a desire to learn and has an interest in the catering industry as well as cookery and the service of food. You must be flexible and self-motivated. You will need good preparation skills and to be well organised.

Extra Costs

You are required to purchase some specialist equipment before the start of the course. This includes kitchen and restaurant uniforms and a basic set of professional kitchen knives. The approximate cost of which is £200 - £250. The College will give you more information on this before you start your course.
